ROS #3 plus salad recipe

I know most River of Stones entries are short poem-like writings, but with me Rules are Optional. You get what you get.
Recipe for salad -
1 head cauliflower, cut in small pieces
1 head broccoli, ditto
1 med. red onion, ditto
1 cup lightly salted cashews, some cut some not so much
1 cup Craisins, or dried cranberries, cut if you want (I didn't)
5-7 slices of fried bacon, drained and crumbled (I get pre-cooked bacon at Trader Joe's and heat in microwave)
Dressing: 1 cup mayo, 1/3 cup sugar, 2-3 Tbls. cider vinegar - mix well
[I used half mayo and half plain yogurt; half sugar and half Stevia -- in the Summer I think I would use all Greek Yogurt, maybe honey yogurt and taste before adding sugar.]
Toss everything together really well. (You're welcome Sherry :-))

And some times what it is is big and bad, and other times not so much. And there is much more to you and to me than MS. It is a part of our lives, but it doesn't define us.
ReplyDeleteI love your small stone, short, sweet and to the point! And the rules optional, I rarely follow the rules...and of course the salad recipe looks sublime!

That salad (minus the bacon for vegetarian me) looks really nice. Thank you. And yes, I think I would use Greek Yoghurt too.

ReplyDeleteI am alao (mostly) vegetarian; DH thought that adding kidney beans would be a good source of protein in this salad.

@ Sherry - Just remember to cut the pieces small; I wasn't quite diligent enough with that, and it does make a difference. Alex will come up with his own tweaks, I'm sure. LOL
